To begin with, tea leaves are plucked from the top of the plant; usually two leaves, and the bud is plucked for good quality tea.
Once picked, the leaves are left to wither in large open troughs for 12-24 hours.
Once withered, the fermentation (or oxidation) process begins. The amount of fermentation that occurs determines which tea is produced.
Once the fermentation process is stopped, the tea is then dried, graded and packed for your consumption.
